Work collaboratively with a team of Chefs, Kitchen Utilities and Dining Room employeesBuffet style bulk cooking for Breakfast, Crib, Lunch, and / or Dinner and DessertsEnsure OH&S compliance, adhering to safe work practices and food handling proceduresEnsure all catering controls are in place, and wastage is kept to a minimumMaintain high standards of food hygiene, safety, infection control and cleanliness in accordance with Compass standardsManaging catering team performance and employee development The Person
Chef Qualifications / minimum of Cert III in Commercial CookeryExperience within bulk catering environmentsExcellent knowledge of all kitchen procedures and operationsExperience in leading a brigade, rostering and cost controlExperience with hygienic work practices and appropriate HACCP guidelines...
